Toddler Friendly muffins!

This recipe is so easy and packed full of healthy omega 3 fats, high in protein and, yummy! Have a play around with it to suit your taste buds x enjoy! 


½ cup LSA or Chia seeds 

1 cup Almond meal

2 cups Self raising Wholemeal flour (or gluten free equivalent)

1 cup Oats (or quinoa flakes if gluten free)

1/3 cup Extra virgin Olive oil

2 Eggs

2 cups in total of Frozen berries and/or Fresh seasonal fruit

Adding extra flavour:

3 heaped tsp Cinnamon

2 tsp vanilla extract 

3 tablespoons of xylitol (you could also use agave syrup or stevia)

Sprinkle of brown sugar ontop of each muffin

I have been know to squeeze a couple of oranges and add the juice for flavour also (adjust the ratio of dry ingredients so its not too 'wet' if you do this) 

Mix dry ingredients in a large bowl. Make a ‘well’ in the middle and pour in wet ingredients and your selection of flavour ingredients. Stir until well combined. Pour into greased/cased muffin tin. Bake for 30-40 minutes until golden (if you feel so inclined/have the time to, sprinkle dark sugar ontop of each muffin before the last 10 minutes of baking, then put back in the oven and finish baking. ) EAT and ENJOY! – for something different, warm up a muffin and break it half, spreading a nut butter on the insides-YUM!
