Bump up the nutrition in your ANZAC biscuits and enjoy the great flavour of the low GI molasses or coconut sugar.
Healthy Anzac Bikkies
(makes about 40 biscuits)
1 cup rolled oats
1 cup buckwheat flour
¾ cup molasses sugar or coconut sugar
¾ cup coconut dessicated
2 tbsp chia seeds
1/2cup almond meal
125mL extra virgin olive oil
1tbsp golden syrup
1/2tsp bicarb soda
2tbsp boiling water (or more) for bicarb
Combine oats, flour, sugar and coconut.
In a separate bowl, combine oil and golden syrup, then mix bicarb soda with boiling water and add to the oil and golden syrup mix. Let it foam up for a minute. Then stir the liquid ingredients into the dry.
If needed, add more water to the mix. Once a good biscuit consistency is reached place tablespoonfuls of mixture onto baking paper.
Cook in a slow oven on 150C for about 20minutes - enjoy!!!
