I often recommend this recipe to patients who can't manage to get in protein with their brekky smoothie in the mornings or for those who just need a low GI, high protein snack. 2 daily is the equivalent of a serve of protein powder. Enjoy -you won't get any sugar lows with these lovely snacks!

Ingredients: 

1 cup LSA

1 cup dairy free protein powder

1 heaped tablespoon tahini

3 tablespoons nut butter

1 teaspoon coconut or olive oil  

10 stewed prunes

vanilla, xylitol/stevia and/or raw cacao, cinnamon  etc… to taste

 Method:

Stew prunes by just covering with water in a saucepan. Gently stew for 10-15mins. Allow to cool. Save leftover prunes for your muesli or yogurt tomorrow :) Blend ingredients.  Add a little more of the stewed prunes or the oil if it is not blending easily. Once everything is blended, use a dessert-spoon and scoop out a spoonful of mixture. Roll each spoonful into a ball. You can roll into dessicated coconut, raw cacao powder or puffed rice/millet for extra variety if you like. Keep in the fridge. Will last 5-6 days (if they don't all get gobbled immediately!)
